Kuku wa kupaka basically done at the coastal region of Kenya for special occasions, a well marinated grilled chicken served with rice at dinner.

Recipe Type: charcoal grill chicken
4 persons
Prep time: 15 min (grilling)

Ingredients:

1kg skin removed chicken joints
1 tablespoon salt
30g grated fresh ginger
1 tablespoon coriander powder
1 clove garlic, finely chopped
¼ cup lemon juice
50g tomato paste
¼ cup olive oil

Preparation:

In a large bowl, combine olive oil, tomato paste, ginger, garlic, lemon juice, coriander  powder, salt; mix well. Add skinless chicken joints mix well and cover. Let marinate for 1hr.30 minutes before grilling.

NOTE: Let the chicken be well done under low fire before serving.

SATAO CAMP
Nestled amongst trees and surrounding a central water-hole, the semi-circular layout of the camp provides an excellent viewing point for each of our guests. Satao Camp has 20 tents, all e-suite, thoughtfully positioned to ensure a full view of the camps “own” watering hole.
The 20 tents are made up of 16 family tents and 4 suites each tent is constructed of sisal and boroti poles topped with a makuti roof, only the front of the tent is visible as each tent has its own patio with table and chairs.

As a president of UNESCO World Heritage sites Traveler’s Association. Myself and some members of our association wanted to visit World Heritage sites of Kenya.

A group of guests booked a day trip to Kisite island where they went snorkeling inside Kisite Mpunguti marine reserve. They swam alongside dolphins, turtles , snappers, rays and many of the most amazing fish of the Indian ocean.

On Wednesday November 2nd 2011, the minister of tourism, Hon. Najib Balala, was awarded at the Reef Hotel Mombasa for his election as chairman of the important executive committee of the UNs World Tourism Organization.

This is a huge recognition for Kenya and a personal achievement for Hon. Najib Balala.
